Cuisine of Paraguay

María Eugenia Aquino Fontana

 

 

 

Paraguayan chef and gastronomic professional focused on industries and teaching, with extensive national and international training in cooking, bakery, and pastry.

She is the granddaughter of Professor Josefina Velilla "Chichita" de Aquino, founder of the first Paraguayan Culinary Institute, author of the best-selling book of traditional dishes in Paraguay, "Tembi´ú Paraguai" (Paraguayan food in Guarani Language) and founder of JJ Superpan Bakery, where Eugenia started her career in 2002 and continues to work in her family-owned bakery.

Eugenia is Director of the Culinary School at SNNP (Servicio Nacional de Promoción Profesional) since 2015, a public institute that promotes middle management and technical skills, with an average of 600 students per month in all culinary specialties.  She is also in charge of supporting the job placement of her students. She collaborates with the implementation of the National Catalogue of Professional Profiles of SINAFOCAL ("Sistema Nacional de Formación y Capacitación Laboral") by evaluating and certifying the skills of empirical cooks residing in Paraguay and abroad. She has also taught in several culinary institutes in Paraguay.

She is Chef advisor for Nutrihuevos and Frigorifico Neuland. She also serves a Chef Juror for the Masterchef Paraguay in its four seasons.

Eugenia works closely with vulnerable sectors and people with disabilities. She is also collaborating with several Paraguayan governmental agencies and foreign embassies in different projects involving gastronomy and cultural exchange.

She is the proud mom of Nicolás, a bright and promising 18 year old, who is preparing to enter Medicine School and wants to follow the steps of his grandfather and become a neurologist.
